Heads, Bars and Thundermaxx/PCV/et al

Ever more questions about my upcoming engine build from 96" to 103":

1) I was going to send my stock 96 heads for port/polish to BC Gerolamy in Rancho Cordova, CA. Once again, my goal is to get as much torque and midrange first, with top end as a secondary motivation (thinking Woods 555 cam with directional lifters.) Question: I see guys at the dealership buying SE heads (which ones?) and having them sent out for port/polish. I'm assuming the SE heads flow nicer to begin with, but if I'm having head work done anyway, what do SE heads give that stock ones don't? Is there only one SE head to get for a 103", or a range that works for a variety of engine builds?

2) One of the things I've been contemplating ergonomically is the bar situation. I hate apes, especially super tall ones, but a guy I talked to the other day at Iron Steed in Vacaville, CA said that his mini-apes on his RG gave him beaucoup leverage, because his hands, arms, elbows and shoulders were aligned in a position of strength, much like how your arms and such are aligned when you do a bench press. He said that he has to be careful at times not to oversteer because the effort required is minimized (as good ol' Johnny Carson used to say for effect, "I did not know that...")
I love the look of beach bars on a RKC, not the wide, flat tiller style, but I guess what Harley calls the narrow ones that have a little bend to 'em. Chubby makes a fat beach bar that I wanted when I first got the bike, but I have to ask: is there an advantage to having your hands low on these kind of bars? First I heard you get more leverage, then I hear someone else say it's like steering with a hula hoop. I'd like the idea of leaning forward a bit if that's what beach bars'll do for me.

3) I was going to go PCV with autotune all along. Bobby Woods says use TTS Mastertune, especially if I change to 30 tooth up front and 70 tooth out back. Then there's Thundermaxx for $1,000 that replaces your ECM. I know they all work differently as far as how trim is set using afr, timing, etc. If anyone knows, how is TTS better than PCV, and what's the advantage of replacing your whole ECM versus cheaper piggybacks?
