...discussing race.? It always feels like a knee jerk reaction.

Why the anger and hostility?

Race has been a prominent component of American history and it remains to this very day.
 
Their ancestors pushed the natives to one side, now they own the country, and get upset if someone tries to squeeze them a tiny bit
 
I'm not white, but many of my friends are.

They are not angry about discussing race -- they're just angry when certain minority groups "play the race card" in order to get what they want.

If I were white and were constantly getting "white guilt" foisted on me for decades-ago racism that I had nothing to do with, I might be a little angry too.
