Have you ever cooked fish this way?why or why not?

I've got some Tilapia that I'm gonna bake and I was thinking about marinating them in some peach juice for a couple hours before I tumble them in breadcrumbs and bake them.
I was thinking the peach juice will carmelize and seal the moisture in also because the peach juice is sticky most of the breadcrumbs will stay on the fish.
 
don't soak fish in juice. it becomes tough, and inedible. tried it once. never again. just dip them in the peach juice, then bread.

I have never tried this, but it sounds good.

the peach juice will not carmelize. i make chicken with it a lot, and it never carmelizes.
