I bought some Beijing noodles the other day and was just wondering if anyone knew how to cook them properly and if the noodles are supposed to be really starchy.
I followed the directions to boil the noodles for 8 minutes and then rinsing them. They come out perfectly fine but I noticed how starchy they were when I ate them. The really soaked up the sauce I made and seemed slighly doughy almost. Is that supposed to happen? What am I doing wrong here? Also, is rinsing them supposed to help with the texture? Thanks in advance.
