Good supper to cook while camping on an 'expedition'?

Basically I'm going on a Duke of Edinburgh Bronze Expedition (i.e. one day walking, then one night in a tent and another day walking)
so i need ideas for fairly 'impressive' food (using one of those portable camping ovens - i forget the name) that doesnt weigh too much, to eat for supper..?
