Going to run a bar & restaurant, any idea of planning the weekends' brunch?

It'll be a german bar, serve food during the day as well, Ideally, we'll serve brunch during the weekend. But I don't have much clue of how to do that and how to start, how to organize it.

At the same time, I would appreciate for some marketing ideas. Thanks!
Yes, noon for lunch, night for bar, weekends for brunch.
