Goats, Oxes, Sheep in Sumerian and Early Civilization?

I'm in a bind in the study guide for humanities on Sumeria and Babylon.

The question reads: Why were oxes, goats, and sheep significant in Sumerian and early civilization?

Out of contexts I have this: *Ziusudra then sacrifices oxen and sheep. The Bull Capital from Persepolis Persian stone c. 400 BC is an example of how oxes, goats, sheep and bulls were significant in the Sumerian culture.

Doesn't exactly answers the question, that is just the only details I can get about it.
