Gluten for sculptures?

It sounds like he is just using wheat flour. Wheat flour contains a lot of gluten. Gluten is the stuff which makes dough elastic.

You can also buy gluten, but I would doubt it's worth the bother. Just use flour. Though I prefer wall paper paste in paper mache.
 
i saw this guy using gluten to glue paper towels and stuff to make his sculpture (sort of like paper mache) how do i get this gluten and/or what can be an alternative?
