Generally how much of a finished book is the editors writing?

Okay, a Z-List author came into our school a couple of days ago to give a lecture of sorts (he wasn't very good in my opinion).

He said that his finished book was only about 40% of what he had written, and 60% of what his editor had changed/added. He also said that most new authors have similar editors. Personally I don't that was right.

Is his statement a one off, or does a editor really hold your hand whilst you write the book (metaphorically of course) and rewrite your book for you?
