Food Allergy

My Mother started coughing up phlemg/saliva today after a few spoonfuls of food. It went on for about 45 minutes accompanied by a gurgling noise. Eventually we called an arabulance but it had stopped by the time it arrived. She said that she felt spasms in her throat. This is the third time that it has happened but we are unsure what is causing it. It always happens during eating so we are assuming that it is food allergy related.

Any help that you can give would be greatly appreciated as I cannot find these symptoms on the wider net.
