Fermenting apple cider? How much yeast?

I'm about to buy a gallon of organic apple cider and throw in some yeast and leave it in the fridge for about a week to ferment it. How much yeast should I throw in?
Well I kinda don't want my mom to see it...
 
You can put 10 pounds of yeast in and you will still end up with apple juice as fermentation will not start at low temperatures.

You need to keep it around 70f, and leave it for 3 or 4 weeks minimum, if you do that (and buy juice with no preservatives in it) one sachet of yeast will do.
