Mine would be these scenes from Ghost Ship:

The Opening Scene
When the dancers are all murdered by a single wire, it really shocked me when I first saw it

The Flashback
Where Katie's ghost shows Epps what happened on the boat, including the wire incident. Love how it explains the other things not seen at the start of the film (i.e, Katie's death) and the big Jack Ferriman reveal. I also think the whole sequence has a chilling feel to it, and the music fits well with the scene.

Not for the faint hearted!

The scene in Godfather when all the guys are sitting around discussing what's to be done now the Don has been shot. Someone brings in the fish. I just love the dialogue and everything about it.

The start of Amelie, where they explain the background about her childhood. It's just very charming and quirky.

The opening scene in The Dark Knight.

Confrontation in the street scene in Dead Man's Shoes - http://www.youtube.com/watch?v=b-_Wxak8k6g&feature=related
