Went to Fatz the other night .... yeah it was Fatz Tuesday. One
side item I always order is their cheesy grits. I like polenta or
grits in any way, shape or form. But, the thing about their cheesy
grits is the grit is large. It is definitely white corn. And it is
sort of fluffy ... like some people like their mashed potatoes. I
know besides cheese, they use some bacon for flavor .... pork fat
rules! The grit is about the size of the little round ball pastina
that is usually used in broth or like the larger pearl couscous .
I've purchased the coarsest ground white corn meal I could find in
western NC (grits country) but it is no way like the stuff Fatz
uses. Any ideas?
