Extra-curricular advice (esp Sports) to get into a good college?

I'm only a freshman in high school, but I just realized that I have nothing particularly great to recommend me to a good college. I am a good student; I'm in a gifted program, and I'm currently earning a 4.0. I'm also an AP/IB student.

My current extra-curricular activities are math club (I participate in math competitions, and have won various places, but usually not 1st), I volunteer at the Boys and Girls Club, and I do a little theater. I do play several instruments, and plan on auditioning for a youth symphony orchestra next year.

What I realized I'm missing is sports, and I think that generally, doing a sport gives you a greater chance of getting into a good college. As a general rule, I'm not very athletic (hence the question), so I don't have that much experience with sports. So I would like to choose a sport that I can start rather late, and doesn't require years of training/practice. I already have backgrounds in dance (ballet, jazz), ice skating (very rudimentary), volleyball, tennis (very rudimentary), and a summer of swim team. Please take "very rudimentary" seriously.

So I was looking into a few schools, and because I'm most interested in Stanford, I looked for water polo. However, my school does not have a team, and I couldn't any teams outside of school locally. So, what I'm looking for is a sport that may not be so popular, so it can help me get into a good college, perhaps with scholarship opportunities, and something that may not be too difficult for me to learn. I'm willing to put in hard work and effort into it, so that's not so much a problem.
