It might be simpler to first synchronize your Palm with Outlook and then synchronize it to your Mac to get the data transferred. On the first time you sync to the Mac, make sure you change the settings to handheld overwrites desktop. I don't own a Mac, so I don't know the way the menus are set up on a Mac. But I'm pretty sure this option exists somewhere.
