Experimenting With Food Deprivation?

Just out of curiosity, I have decided to see how long I can go for without feeling irresistibly compelled to eat food. I will drink water but consume nothing else for as long as possible. My question is, depending on how long I make it when would be the point where I could be doing significant long-term damage to my body? I realize that people like Gandhi have fasted for over 20 days, so I figure it's about that long.
