Exactly what is the chemistry behind the loss of vitamin c during cooking?

basically im doing some chemistry courswork , and i know some is leached out of my peas and thats about it , in detail what different ways is vitamin c lost and at what temperature? and is thermal decomposition of vitamin c the same thing as the oxidation of the molecule? i know its abit of a toughy, sorry lol
