everything I eat makes me bloated?

Hi guys, long story short, I am currently on a starch, wheat, yeast, sugar and dairy free diet. My diet is eggs, apples, pairs and veg. This is the only way that makes me not bloat.

When I eat anything remotely different these are the other symptoms I get:

headache
extreme tiredness
extreme bloating
weakness
My ears block up so I cant hear everything
I get bad stomach pains

And I think that is it... I have tried everything, gone to the dietitian, doctors, tablets, eliminating food, nothing seems to work! :( do you have anyideas? I have been like this for 2 years, and its recently gotten worse.
