Engineering birds for traits similar to dogs?

Yes, I am aware that rapid generation evolutionary trait manipulation in other animals is rare, and very time consuming/
Besides that
Hypothetically,
All animals can; So... Could a geneticly bred bird ever be designed to withstand the weights needed for actual riding?
Just curious?
