E70 Default SMS Destination?

How do I set a default SMS destination number on my E70?

This a good reason to check the manual. Open contact > Options > Defaults.

I send SMS messages mostly to one person. I want the Text Message editor to default the "To" field to that person's number so that I don't have to enter it each time. My old phone had this feature.

No such feature on S60 phones. You'll have to type the number, select the name, or type the name or partial name. If it's always to one person then I would suggest you always keep just one message in the inbox that you can reply to. That's about the quickest way you can do it on s60 phones.

Best suggestion, keep one message and use the reply function.
