Does it really matter what university I go to, after high school?

I was wondering if I would receive the same amount of education, if I went to a less prestigious and selective university. For example, would I still learn the same amount of information, and understanding from learning about Physics at the University of Oregon, than I would at Penn State, or would I receive more learning from Penn State, which would be the more prestigious and selective college? I mean, does it really matter what university I go to? Would a person who is majoring in Mathematics in Stanford receive more learning about the subject, than a person who is majoring in the same thing at the University of Arizona? I consider myself to be kind of scholarly. When I graduate from high school, I would like to further my knowledge to the best of my abilities. Whatever my major may be, I want to receive the optimum education for it that will allow me to have a complete understanding of the subject.
