Does changing to T-MOBILE Even More Plus void..?

No, your current contract will continue but because you paid the $35 fee they will let you move to the lower priced plans. If you cancel then you're still responsible for the early termination fee.
 
Does changing my plan to the even more plus void my contract with T-Mobile? I know that I will have to buy the phones outright now.
