Does anyone have any suggestions about cooking curry?

I love making curries at home, I make vegetarian and generally add banana, potato, butter beans, quorn pieces, marrowfat peas and onions, with a couple of spoonfuls of pataks hot paste and about 4 red or green chilis as I like it hot. Does anyone out there have any ideas about anything I can do differently or better? Also, is ready made paste unhealthy?
