All of that should be feasible. When you buy the TV, ensure that it actually has a headphone jack--most larger sets do not. And there's no easy way to adapt a headphone connection to a set with no headphone jack.
Once you have the right TV, any wireless headphone system should work fine.
Large button universal remotes are available. You should be able to find one with an Internet search. One caveat--get a name brand TV, not something from an obscure manufacturer. Setting up a universal remote almost always works with the familiar top brands, and very often does not with the off-brands or discount cheapos.
