Dodge Dart Restoration?

I have a 1968 Dodge Dart Slant-Six. It was originally a Monotone Yellow Hardtop Coupe. I am thinking about restoring it since I have over 90% of the parts. It has very little surface rust and the trunk is solid. Any tips on what I should do. I think this is a very unique car for a slant-six. The interior will be the most work. I found a website and I calculated it would cost about $2000 to get all the materials I need to restore the interior (carpet, headliner, bench seat covers, bench seat foam, back bench seat covers, vinyl top, mats, door panels, and a dash pad).What would be the worth after I restore it to 95-100% originality? I checked NADA and they said if it's perfect it should be around $8,500. The link has a photos and information on my car. I was thinking later on in life, maybe I will throw in an upgraded 360 with a manual transmission (either a 833 or a tko-500/600), a dana 360 and maybe some cragar rims. So far I haven't found any good suspension kits.

Any advice would be appreciated. I am just a college student trying to learn how to work on mopars.
Yeah, I just sold my other Dodge Dart this week and half the interior in it was great half was ok, but the body wasn't too straight, the paint was terrible, it had all the holes where the trim was suppose to go (it had no trim), and the engine (273) wasn't working properly. He basically wanted it for the bucket seats. But I got $2500 for it when I spent $4000 for both. I know I can sell this one for at least $2000
