Doctoring Up Stuffed Shells

assemble in layers:

italian style tomato sauce
lightly sauteed sliced mushrooms (for moisture reduction)
italian cheeses, your choice or blend, I like romano, asiago, and mozarella
freshly cooked whole italian sausages
pieces of roasted red sweet peppers
more mushrooms
more tomato sauce
more italian cheeses
layer of stuffed shells
more roasted red sweet peppers
more mushrooms
more tomato sauce
more italian cheese blend
generous grating of parmesan or romano

Bake covered at 400F for 45 minutes. After 30 minutes, remove cover if
desired for browning.

Let rest 10 minutes and serve.
