In the restaurant, we always had to weigh it before cooking. Yep, it'll shrink, but..... At home, I never weigh my food.

And I don't get why we're suppose to weigh meat before cooking when there is a certain amount of shrinkage depending upon how well you like it cooked. I know some people just want their steak walked through the fire and don't even care if it's warm on the inside. Gak. Their choice, though. May as order carpaccio if you like meat that raw with the parasites and all in it.
