Do you have to rejet a street bike for any reason besides mods?

The idea of a carbed bike is about 6 years before my time as a rider, but now I find myself looking at getting an old ('99) R1 for track days because I feel bad beating my new and beautiful street bike to death on the track. So here's the question... This guy is selling his 99 R1 and it has a Leo exhaust and the bike was jetted after the exhaust was put on. So, am I going to have to rejet for any reason at all? I don't plan on upgrading anything besides sprockets and the like. If you run that bike near redline for a full track day, will anything change? I feel like an idiot asking this but I've never had a bike that wasn't fuel injected, so I'm completely clueless. Finally, are there any periodic maintenance things that differ significantly from f.i. to carb? I'll only be riding this bike for a year and a half til I'm done with college, so I don't plan to do much more than clean/lube the chain and change the oil. Thanks for the help!
