Yes you can in the south of Spain, for example the Via de la Plata from Sevilla to Santiago de Compostela. This is the whole route. You can start off in Sevilla and do a part of it. The nights can be quite fresh. It can be rainy, but you will be in a widely unknown part of Spain, the western parts of Andalucía and in Extremadura.
