Dinner tonight.... shrimp

I faked this dish tonight and it turned out great. I had a one pound
bag of extra large shrimp to work with. I finely chopped 3 large cloves
of garlic and about an inch and a half of ginger root, coarsely chopped
half a large red pepper and a pinch of dried chilis. I heated some
olive oil in a pan, added the onion, peppers and ginger and softened the
a bit, then added the shrimp (which had been slightly salted). Then I
ground some pepper on top. I removed the shrimp when they were done,
added about a cup of pineapple juice and cranked up the heat and reduced
the liquid. I threw in a handful of chopped cilantro, stirred it around
and poured it over the shrimp and rice.

It was a very successful experiment.
