You could make potato cigars.

You’ll need:

3 large poatoes
1 large egg
1 Egg separated, reserving the egg whites
½ Cup Gruyere Cheese
4 Tablespoons butter
1 tablespoon truffle oil or 1 shaved truffle
Chinese Egg Roll Wrappers, about 14
1 Cup Olive Oil
1 Cup Crème Fraiche
2 Tablespoons fresh Chives

Cook the potatoes in boiling water and mash with salt pepper butter cheese and egg

Add one tablespoon white truffle oil or 1 shaved truffle to the mashed potatoes and mix well

Lay out the egg roll wrappers in front of you and fill each with 2 tablespoons of the stuffing and close using the egg whites

Heat a frying pan with 1 cup olive oil and when hot add the potato cigars

Cook on each side for 2 minutes and roll onto another side

Cook until the cigars have lightly browned and the cigars are holding together

Mix the crème fraiche with the chives and serve the potatoes cigars hot with the crème fraiche as a dipping sauce. They are wonderful and elegant.

POTATOES ROESTI

5 medium baking potatoes
1 large onion
salt and pepper, to taste

Boil potatoes in their skins for 10 minutes in rapidly boiling water. Remove peels when just cool enough to handle (but while still quite warm). Grate potato and onion coarsely into a bowl. Squeeze liquid out from the mixture and drain as much as possible. Mix and form into a large round patty. Fry in 4 tablespoons butter until potatoes are nicely browned and a crust has formed.
Using a large flipper carefully turn over (or turn upside down onto a plate). Add a few more tablespoons butter to skillet before returning the patty to the pan. Continue to saute over medium heat until a light crust is formed on the second side.

If potato patty is browning too quickly, reduce heat and finish over slow heat so that the inside will thoroughly cook. You can also finish this off by baking it in a preheated oven, which is usefull if you are making more than one. These can also be made in smaller portions, if desired.

Season with salt and freshly cracked black pepper, to taste.

You can serve this topped with sour cream.

SCALLOPED POTATOES WITH CHEESE

10 medium russet potatoes
1 can Cream of Chicken soup
4 cups shredded cheese (Colby Jack)
salt and pepper
garlic powder

Scrub potatoes and slice into circles.
Butter or spray a casserole dish with oil. Layer the potates at the bottom and pour over the chicken soup. Sprinkle with cheese.

Bake at 350 degrees about 30 minutes, or until potatoes are fork tender and cheese is golden and bubbly.

I am looking for the most unique way to cook potatoes. I don't want just regular sliced potatoes, mashed, baked, or twice baked so I am counting on you to help me out on this one. BTW I am trying to come up with something new because I am cooking for my wife tonight and want to impress her with something a little new and different. I already have everything else for dinner but the potato is my only hang up.
