Differences between N80 and N95 aside from GPS and camera?

The N80's keys are very stiff. Others can comment on the N95. But with that much typing, you are in dire need of the Nokia SU-8W Wireless Keyboard or a similar device.

I know, I should be using a full keyboard but most of the time it wouldn't be convenient for me because I am on the go.

You may have trouble finding one, however. They've been out of stock at nokiausa for quite a while.

I would say they're similar in stiffness. The major difference is that the N95's keys have a "bump" on each key, while the N80's keys are flat, so it's easier to tell that you're centered on a key with the N95. The N95's keys are slightly less curved, and also have brighter backlighting.
