I say start with "American", it most likely the food you grew up with, before jumping into Japanese, since most Americans have never eaten real Japanese. There are so many place to study, for me I went to a technical college and got my 2 year culinary degree for $6000, while my frineds went to arts institutes and spent$40000 for just a year with no degree. The schooling i just a base to get you comfortable in a kitchen, you learn a lot more working in restaurants, but to get a good job in a restaurant they want schooling.
I would then suggest actually going to Japan to learn their cuisine, instead of trying to learn it here.
My high school also offered a program to go to the technical college while I was still in high school, so it was free, and gives you an understanding, plus gets you out of school. Ask your advisor about it, post secondary enrollment option or PSEO.
