Cooking meat with marbles of fat and not making it rubbery?

Every time I try to cook meat that has layers of fat (example, pork shoulder) the area with the fat ends up really rubbery and inedible. Is there a method of cooking the fat so that it almost melts in your mouth? My bf loves that part of the meat and though I don't I'd like to make it good for him.
