cooking job in a restaurant?

I want to become a chef in the furture but culinary school at the moment is too expensive for me. I want to gain some more experience as a cook first, as well as save some money, before i decide to go to a culinary school. now, i see a lot of restaurants have Mexicans working in the kitchens. now im almost certain they didnt have $50k to attend culinary school just so they can work at a restaurant chain and be a line cook. how can i enter that kind of establishment? i cook very often but i dont have the experience in the kitchen. any tips on what possible chains in california will hire maybe a prep cook or where i can get experience so that in the future, i would be more appealing to employers and culinary schools/colleges?
