Concerning photography, how do I mount a photo so there is no "ripple" effect?

Usually 8x10 photos come out OK, but larger ones, sometimes when the light effects the photo, there are ripples. This is very upsetting as a good (or great!) photo is completly ruined. Even some craft and art stores score miserably on this...I hate to subject my art to a hit 'n miss attempt. Thank, Bruce
