Chrysler's engine not starting?

I recently put a new head in my 1983 Dodge Ram b150. The old 1 was cracked. The issue i have now first off is the oil gauge. Its not at "H" but over it meaning maybe too much oil? The second issue is the oil it self. Once it made its way thru the engine quickly it turned to a brownisj color as opposed to clear. now its a lighter brown. I think there might be water in it but when i drainedf the oil pan it was b4 i put water in it. i cranked it dry but diddnt run it hot to clarify. now im losing water, which i come to find out i was losing through holes, put the screws in to stop that, that was ok but then the oil in my filter is all brownish and runny. but if i was losing the entire contents of my radiator thru the block or head why diddn't the oil pan feel up? ill add more details later.
the gasket was brand spanking new on the head. and now i got no gears. why?
