I believe the Bible to be both literal AND symbolic.
We are to take it literally FIRST and then search for the symbolic.
The creation account is as literal as it gets. God made the point of describing each day as morning and evening as He numbered the days. That tells us we are to take it literally.

Gen 1:5 And God called the light Day, and the darkness he called Night. And the evening and the morning were the first day.
