Seriously overfilled the coolant, it sounds like to me.
This will continue happening until the coolant is no longer so over-full that it spills out when hot.
The first couple of days, my bet is you didn't drive the truck as far as you did on the third day-- at which point it heated up, the coolant expanded, and "burped" it out all over your garage floor. I'd be willing to bet it was also leaving a trail of coolant behind your man while he was driving down the road, as well.
Pay close attention the to S-10s temperature gauge, if it has one. If you get a coolant or engine temperature warning light, you need to park it and let it cool down. After that, I'd be getting it looked at by a trusted mechanic-- preferably not the same one who did your coolant change.
EDIT: Pedro, you made a good point. Could have some air bubbles in the radiator tubing. But to do that procedure, make sure you wait until the engine is dead cold before removing the radiator cap-- else you might get a "burp" of scalding hot coolant all over you...or at least a burnt hand. If you do this, remove the overflow jug lid, as well and be prepared to have an over-full coolant system anyway.
