Car acceleration sucks in toyota celica gts (2zz ge engine)?

My car has been giving me a real hard time getting up to speed these past few months. A while back I changed my spark plugs and replaced them with bosch platinum+2 plugs. Should I try going back to the regular plugs that have to be gaped. Also I didn't know this untill here not too long ago but I have been told that I should be using 93 or 94 octane in my car because of the engine type. I have been using 87 octane for a while now. Could the combination of the to be holding my engine back. I used to be able to get my rpms up to 7 grand no problem but no the most I can make it is 5.(If I accelerate at a nice even speed the car does alright but if I smash the pedal to the floor the car starts shaking really bad and the engine nearly cuts out.) Please help and give me any ideas that you can.
It is a 6 speed manual. I just replaced the clutch not even a year ago and I haven't riped the crap out of it so there is lots of clutch left.
