Thomas Keller at The French Laundry made Anthony Bourdain some kind of tobacco infused ice-cream or something like that when he went there. I would think it would give a nice taste to things, especially the sort of thing where you would traditionally use chocolate, whether sweet or savoury, but I would bow to Thomas Keller (obviously!) and use it as an infusion rather than actually putting it what I was cooking. What's unhealthy about tobacco are the additives the cigarette companies add to make them burn properly and taste how consumers are used to, and the changes that take place once the tobacco is burnt, and that occur within the smoke- tobacco itself it just a plant with certain properties like any other herb.
