Can you cook a whole chicken to an internal temp. of 165 degrees F?

I've been reading that you have to cook a whole chicken to an internal temp. to 180 degrees F, but if I were to cook it that long, the chicken would get rubbery. I just cooked, and ate part of, a chicken that was cooked to an internal temp. if 165-170 degrees F. Does the extra 10 degrees matter? Or might I catch some disease from the Organic whole chicken that I just consumed?

Best bet on chicken, is to cook it till it's done through and through. Pink means it's still not cooked. But the internal temp makes it a lot safer. If your not sick in the next day or so, then you should be OK. lol!

Still cook it to 180!
