It depends on what kind of fish it is. Plecos, otos, loaches,some cichlids, and a lot of the known vegetable-eaters just love cucumber, zucchini, and maybe even a little bit of carrot (chopped up fine, of course).
I would do separate research on the subject, to make certain that your own fish are those than can and will eat vegetables.
