Can someone explain to me the concept of gingerbread and ice cream sandwich?

I have an HTC thunderbolt. i happened to see that gingerbread was released, and was very bugged so they took it off, and re-released it today? first of all, what new does gingerbread bring, and how do you update from 2.2.1 to it?
