Can poetry be a column of single words?

I have written some poetry which was meant for my eyes only but my boyfriend accidently read it.
Sort of like

Park
Walking
Strolling
Looking
ice cream
desire
want
money
gimmie
ice cream!
happiness

etc sort of like that.
I called it poetry but he said it has to be sentances.
What say you?
