I REALLY want a Black Ghost Knifefish but I heard that they require at least an 100 gallon tank in their fully grown form. Is their any way to limit their growth? I heard if they're in a smaller tank with other inhabitants, they don't grow as much.
THAT DOESN'T HARM THE FISH!!!

Stunting growth is cruel because it shortens their lifespan.

No fish grows to fit their environment without sacrificing health and life. Lack of space and poor water quality will stop a fish from growing on the outside while the organs continue to grow on the inside.

If you cannot properly house a black ghost knife than you simply have to wait.

yeah
if you leave them in a smaller tank
they will not grow unless their tank is bigger
