Can I lower the boost on a stock Mercedez Benz forced induction engine?

I am thinking to buy a used S55AMG or S600. They both are gas guzzlers that provide almost 500HP. I love the power but would like to have an on off switch to the boost. I know there are boost controller kits but not too sure if they lower less than stock boost. I don't mind having no boost sometimes with over 300HP.
