Hey Big Mac, I graduated from FSU in 2001, so a lot of places have changed. When you say "laidback bar or lounge" I assume you mean places not overrun by obnoxious college students, right?
The Leon Pub is a good old stand-by. It's an absolutely no-frills bar filled with locals. I also remember a place called WaterWorks, which had a great beer selection and had a swanky artistic lounge atmosphere.
I would search for places "off the beaten path". Then again, you can probably find some jewels right in the heart of downtown by the capital building.
