Provided you know the water depth, a float will work however you don't want too much free line under the float because your crawdad will want to crawl and hide under structure hanging you up.
Using no float will require you to keep a relatively tight line and drag the bait along the bottom, a rocky bottom is preferred as that is a natural habitat for crawdads.
