Calling all cooks-- something different for zuchinni?

My daughter works for a food co-op and sometimes gets a great deal on leftovers. This week she brought home s big bag of organic, locally grown farm-fresh zuchinni. OMG they are so good (they're in season here right now in FL)

I usually make zuchinni parmasean (a family fave), or put it chopped up w/pasta dishes, or make ratatouille or just eat it raw in salad or with humus but I wanted to do something really different because I like to experiment.

I used a couple tonight in a quiche made w/ the zuchinni, scallions (she also got those), tomatoes and roasted red peppers... no real recipe, I just did a pantry raid and it came out so good, they are so sweet and tender.

Okay... I still have a few left... need more ideas... something exotic, with a little spice... maybe something with an Asian flair or a nice sauce? She also brought home some avacados, kiwis and vanilla beans so even better if I can include one of those things in the recipe.

Even if you don't have a specific recipe, ideas are welcome... I like to get creative.

Jake, thanks for the spelling correction; I knew there was a double letter in there somewhere, lol.

But no, while simple flavors are great on most days, I am home this weekend, injured, awaiting surgery next week, bored and have an abundance of fresh produce and time on my hands-- most definitely a time to get creative, it keeps my spirits up and my mind off things!

I think I am going to have to do some stuffed zucchini because my hubby is a meat lover, he loves my stuffed peppers.

and I forsee zucchini bread for breakfast on Sunday as a grand finale to my zucchini-frenzied weekend.

Some great ideas here so far! but I'll leave the question open till morning before deciding.
